I Eat Saturated Fat

Jeg indtager mættet fedt, fordi det er sundt. Mange er “bange” for at spise mættet fedt, fordi vi ofte får at vide, at det er sundhedsskadeligt. Faktum er, at vi har brug for alle fedttyperne, inklusiv det mættede fedt.

Jeg anvender smør og kokosolie til at stege i. De er begge rige på mættet fedt, der netop gør, at de tåler høje temperaturer. Olier, der ikke tåler opvarmning (fx vegetabilske olier), skaber frie radikaler og er sundhedsskadelige, når de udsættes for varme. Der er dog mange, der er skræmte omkring mættet fedt og derfor heller ikke bruger dem til at stege i. Det er bestemt heller ikke til at blive klog på området, da der er mange og ikke mindst modsigende holdninger. Personligt er jeg generelt ikke fedtforskrækket, og ej heller forskrækket overfor mættet fedt. Vi har nemlig også brug for mættet fedt.
Faktum er, at menneskekroppen har brug for alle fedttyper, i forskellige mængder, men ingen af dem er i sig selv farlige eller skadelige. Det handler om mængderne. For meget mættet fedt er ikke godt, men det er for meget flerumættet fedt bestemt heller ikke. Jeg har læst både bøger og artikler om dette, og I kan se nogle af mine referencer nederst i dette indlæg. Jeg understreger her også, at jeg ikke selv er nogen form for ekspert indenfor området, men grundet min store interesse har jeg lagt mange timer i at undersøge emnet, og ikke mindst mærker jeg personligt efter, hvad der virker i min krop. Forhåbentlig kan I få gavn af det, jeg har opnået indsigt i.

 Mættet fedt er sundt

Udover at være det bedste alternativ til stegemiddel, da anvender jeg også smør og kokosolie af andre sundhedsmæssige årsager. Menneskekroppen har nemlig brug for mættet fedt. Det er dermed misforstået, at mættet fedt er gjort til den store synder og udråbt til at være farlig. Mættet fedt har nemlig vigtige funktioner i vores kroppe: fx så udgør mættet fedt 50% af vores cellemembraner. Mættet fedt fremmer optagelsen af kalcium og dermed sunde knogler. Mættet fedt fremmer udnyttelsen af essentielle fedtsyrer, såsom omega-3, som bliver lagret mere effektivt, når man har nok mættet fedt. Smør og kokosolie består begge af korte og mellemlange fedtsyrer, som menes at modvirke lagring af fedt. Kokosolie indeholder store mængder laurinsyre, som er kraftigt bakterie- og svampebekæmpende, og det fremmer immunforsvaret og fordøjelsen. Laurinsyre findes desuden også i modermælk. Over 50% af energien fra modermælk er fedt, hvoraf det meste er mættet fedt. Mættet fedt er vigtigt for barnets vækst og udvikling, men voksne skal også have det. Økologisk rent smør er næringsrigt og en god kilde til de fedtoptagelige vitaminer A, D, E og K.

Altid økologisk

Jeg anvender kun smør fra økologiske, fritgående køer. Kød, æg, smør og andre produkter fra dyr, der har gået ude og græsset, indeholder flere sunde næringsstoffer. Fx indeholder smør fra fritgående køer linolsyre i en form kaldet CLA, som styrker muskelopbygningen og forebygger vægtforøgelse. Så snart køerne fodres med hø eller forarbejdet foder, forsvinder indholdet af CLA. Ligeledes indeholder æg fra fritgående høns, der har spist græs og insekter, omega-6 og omega-3 i indholdet 1:1, hvor de andre æg indeholder 19 gange så meget omega-6 som omega-3 (dette er et helt emne for sig, men generelt mangler de fleste mennesker omega-3, mens de har, forholdsvist, for meget omega-6).

At vælge økologisk og fritgående er i mine øjne generelt et utroligt essentielt valg for at fremme min vækst, fertilitet, humør og hele min sundhed.

I eat saturated fat because it is healthy. Many people are “afraid” of eating saturated fat because we are told that it is harmful and dangerous. The fact is, though, that we need all types of fat, including the saturated fat.

I always use butter (and ghee) and coconut oil to fry in. They are both rich in saturated fat, which means that they withstand high temperatures. Oils that can not withstand too much heat (eg vegetable oils), create free radicals when heated and that is very harmful. However, there are many who are frightened about saturated fat and therefore do not use them to cook in either. It is certainly not easy to know what is right since there are so many opinions. Personally, I eat saturated fat. The fact is that we need saturated fat too.
The human body needs all types of fat, in various amounts, but none of them are in themselves dangerous or harmful. It’s all about how much. Too much saturated fat is not good, but neither is too much polyunsaturated fat. I have read both books and articles on this subject which you can see on my reference list at the bottom of this post. I emphasize here that I am not an expert of any kind in this field, but due to my passion, I have put many hours into studying the matter, and not least, I’ve learned what works on my body, personally. Hopefully you can benefit from this.

Saturated fat is healthy

Besides being the best alternative for frying, I also use butter and coconut oil for other health reasons. The human body does need saturated fat. It is thus misunderstood that saturated fat is something dangerous. Saturated fat serves important functions in our bodies, e.g. 50% of our cell membranes consists of saturated fat. Saturated fat promotes the absorption of calcium and therefore healthy bones. Saturated fats promotes the utilization of essential fatty acids such as omega-3, which will be stored more efficiently when you have enough saturated fat. Butter and coconut oil both consist of short and medium-length fatty acids, which are believed to counteract the storage of fat. Coconut oil contains large amounts of lauric acid, which is highly antibacterial and antifungal and it promotes a better immune function and digestion. Lauric acid is also available in breast milk. Over 50% of the energy in breast milk is fat, most of which is saturated fat. Saturated fat is important for child growth and development, but adults need it too. Organic pure butter is nutritious and a good source of fatty absorbable vitamins A, D, E and K.

Always organic

I only use butter from organic, free range cows. Meat, eggs, butter and other products from animals that have been grassing outside contain more healthy nutrients. For example, butter from free-range cows includes linoleic acid in a form called CLA, which strengthens muscle development and prevents weight gain. As soon as the cows is being fed with hay or processed food the butter looses the CLA. Likewise eggs from free-range chickens that eat grass and insects contain omega-6 and omega-3 in the relationship 1:1, where the other eggs contain 19 times more omega-6 as omega-3 (this is a whole topic in itself , but generally the majority of people already lack omega-3, while they are, relatively, too high in omega-6).

Choosing organic and free range are in my opinion an incredibly essential choice to promote my growth, fertility, mood, and overall health.
