Coconut Yogurt

Denne kokosyoghurt smager ikke bare skønt, men den er ren “superfood”. Den er fermenteret og probiotisk og dermed super gavnlig for en sund tarmflora. Den er fri for mælk og laktose og er ikke mindst et super alternativ til almindelig yoghurt eller skyr. Ikke uvæsentligt er opskriften nem og behøver kun 2 ingredienser: kokosmælk og probiotika.

Kokosmælkens mange sundhedsegenskaber 

Kokosmælk har en række sundhedsfordele. Kokosmælk bidrager til et stabilt blodsukker, og fungerer derfor super til morgenmad for at undgå cravings, træthed og sure miner senere på dagen. Kokosmælk er rig på fosfor, som sammen med calcium styrker knoglerne, samt kobber, C- og E-vitamin, som gør huden elastisk og fleksibel.
Derudover er kokosmælk rig på jern, hvilket mange, særligt piger og kvinder, er i underskud af (inklusiv mig selv). Igennem mit lange forløb med hormonelle ubalancer, har jeg altid fået at vide, at jeg mangler jern, og en kop kokosmælk giver næsten en fjerdedel af vores daglige behov for jern. Fantastisk! Kokosmælk er også en god kilde til magnesium, hvilket beroliger kroppen og dermed er fremragende, hvis man er lidt for stresset.
Mange vil garanteret bekymre sig om, at kokosmælk indeholder mere fedt end yoghurt og skyr, men dette skal man bestemt ikke være bange for. Faktisk kan kokosmælk bidrage til en sund vægt. Fedtstofferne i kokos forbrændes og omdannes nemlig hurtigt til energi og bliver ikke lagret som kropfedt.
Kokosmælk virker antibakterielt og svampedræbende og bidrager således til et sundt immunforsvar.
– Af mange gode grunde kan jeg ikke få nok af kokos. Jeg bruger det i alle afskygninger i min madlavning og i min daglige hudpleje.

Kokosyoghurt

Ingredienser:
1 dåse kokosmælk (jeg anvender irmas økologiske kokosmælk (fuldfed og uden fortykningsmiddel)
2 kapsler probitioka (jeg anvender Udo’s Choice Super Adult)
– derudover skal du anvende en stor glasbeholder med låg, som skal vaskes omhyggeligt inden brug. 

Fremgangsmåde: 

Ryst kokosmælken grundigt, så den bliver jævn og pisk den evt. med et piskeris for at gøre den helt ensartet. Del probiotika kapslerne af og pisk indholdet i kokosmælken. Hæld nu det hele på glasset, luk låget og lad det stå i 10-12 timer. Fermenteringsprocessen kan godt foregå i stuetemperatur men jeg stiller den i ovnen med tændt lys, da der er varmere (omkring 40 grader er optimalt). Efter 10-12 timer smages yoghurten til, og hvis du ønsker den mere sur skal du blot lade den stå et par timer endnu. Stil den i køleskab og spis den kold.
Når du skal lave næste portion, behøver du ikke nye probiotika kapsler, men du kan anvende en portion fra denne kokosyoghurt som starterportion til den næste.
Kokosyoghurten kan holde sig flere dage i køleskab. Bemærk at den vil skille sig i to lag. Dette gør ikke noget, du skal blot ryste/blande det, inden du spiser det.

This coconut yogurt does not only taste wonderful, but it’s a true superfood! It is fermented and probiotic which is excellent for a healthy gut. It’s free from milk and lactose and thus a great alternative to regular yogurt. Not unimportantly the recipe is easy to make and it needs only two ingredients: coconut milk and probiotics.

Health effects

Coconut milk has a number of health effects. Coconut milk contributes to a stable blood sugar. Therefore, it’s a great breakfast option in order to avoid cravings, fatigue and moodiness later in the day. Coconut milk is rich in phosphorous, which, together with calcium strengthens your bones, as well as containing copper, vitamin C and E, which makes your skin elastic and flexible.
In addition, coconut milk is rich in iron, which many people, especially girls and women, deficit (including myself). Throughout my own experiences with hormonal imbalances, I have always been told that I lack iron, and a cup of coconut milk provides you with almost a quarter of our daily requirement of iron. Fantastic! Coconut milk is also a great source of magnesium, which calms the body, thus makes is excellent if you are too stressed out.
Many people will for sure worry about the fact that coconut milk contains more fat than regular yogurt, but this is certainly not something to be afraid of. In fact, coconut milk contributes to a healthy weight. The fat in coconut is quickly converted into energy and will not be stored as body fat.
Coconut milk is antibacterial and anti fungal which both contribute to a healthy immune system.
– There are many reasons why I can not get enough of coconut. I use it in all its different forms for both cooking and my daily skin care.

Coconut Yogurt
 

Ingredients:
1 can of coconut milk (I use organic coconut milk (full fat and without thickener)
2 capsules of probiotics (I use Udo’s Choice Super Adult)
– Additionally you will need a large glass container with a lid, which should be washed thoroughly before use.

Method

Shake the coconut milk thoroughly to get it smooth. Whisk it in a bowl to make it more uniform. Add the powder from the probiotics capsules and whip it into the coconut milk. Pour it all on the glass, close the lid and leave it for 10-12 hours. The fermentation process may take place at room temperature, but you can also place it in the oven with the light turned on as this is warmer (about 40 degrees is optimal). After 10-12 hours taste the yogurt, and if you want it more sour just leave it for a few more hours yet. Put it in the fridge and eat it cold.
When you are going to make the next batch, you do not need to add new probiotic capsules, but you can use a portion from this coconut yogurt as a starter portion to the next one.
The coconut yoghurt lasts several days in the refrigerator. Note that it will separate into two layers. This is just fine and you just have to shake/mix it before you eat it.

Tip! I eat my coconut yogurt with muesli, fresh berries/fruit, cinnamon and vanilla. It is so good!
