Ghee er super sundt og kan næsten kaldes for et mirakelmiddel for alle dets sundhedsegenskaber. Ghee genopretter bl.a. et sundt tarmsystem og bedre fordøjelse. Jeg anvender derfor ghee næsten dagligt i min madlavning. Det smager godt og er super sundt!

Hvad er ghee? Ghee er klaret smør, der fremstilles ud fra almindeligt, usaltet smør. Ghee er smør, hvor vand, protein (laktose og kasein) og urenheder er fjernet, og der således kun er den rene mælkefedt tilbage. Ghee er derfor særlig velegnet, hvis man lider af fx laktoseintolerance eller -allergi. Ghee nærmest smører cellevæggene i tarmen og på den måde genopretter det en sund tarm og bedre næringsoptagelse. Ghee skaber desuden varme i kroppen, hvilket ofte er gavnligt, hvis man oplever udeblevne menstruationer og dårligt kredsløb. Ghee er blevet anvendt i Indien i flere tusinde år, og indenfor den ayurvediske lægetradition siges det, at ghee blandt andet fremmer energi, hukommelse, intellekt, fordøjelse, hud, nerver og celler. Ghee’s særlige fedtsammensætning gør, at hele 96% bliver absorberet – mere end nogen anden olie- eller fedtkilde (læs mere om ghee og dets sundhedsegenskaber HER).
Jeg anvender det som stegemiddel, som en smørklat på min grød, i supper, bagværk osv. Alle steder, man normalt anvender smør, kan man med fordel bruge ghee. Personligt har jeg oplevet en bedre fordøjelse, efter jeg indtager ghee.

Ghee (opskrift holder til 2-3 måneders forbrug)
Laktosefri

Ingredienser:
 6 pakker usaltet økologisk smør

Fremgangsmåde

Smelt det usaltede smør i en tykbundet gryde eller en gryde placeret på en pande på laveste mulige varme (se billederne). Varmen skal tilføres meget langsomt, og smørret må aldrig koge eller brunes. Hvis smørret bliver branket, virker det ikke længere udrensende, og du skal dermed ikke bruge portionen. Det skal ca. stå i 1-2 timer. Det er færdigt, når det er blevet gyldent, og når der ikke længere dannes skum eller bobler på overfladen. Der vil ligge et hvidt bundfald, og det gyldne er dermed det “klarede smør” eller ghee. Hæld det fra gryden i en glasbeholder (ikke plastik) og undgå, at bundfaldet ryger med. Opbevares i køleskab. Ghee kan holde sig i flere måneder i køleskab.

Ghee is super healthy and is almost like a miracle food. For example, ghee has incredible effects on your digestion and gut. I use ghee almost daily. I love the taste too.

What is ghee? Ghee is clarified butter made out of regular, unsalted butter. Ghee is butter where water, protein (lactose and casein) and impurities have been removed. The only thing left is pure milk fat. Ghee is therefore a great alternative to butter, if you suffer from lactose intolerance or allergy. In a way, ghee lubricates the cell walls of the intestine, thus restoring a healthy gut and better absorption. Ghee also generates heat in the body, which is often very beneficial if you suffer from poor circulation and missing periods. Ghee has been used in India for thousands of years, and according to the Ayurvedic medical tradition ghee promotes more energy, better memory, intellect, digestion, skin, nerves, cells and much much more. Ghee has a special fat composition that makes you able to absorb 96% of it – more than any other oil or fat source (read more about ghee HERE).
I use ghee when I fry, put it on my porridge, in soups, baking etc. Everywhere you would normally use regular butter you can easily use ghee instead. Personally I’ve felt a great effect on especially my digestion after using ghee regularly.

Ghee (recipe is enough for 2-3 months of use)
Lactose free

Ingredients:
 6 packages of unsalted organic butter

Method

Melt the unsalted butter in a saucepan or a pot placed on a pan on lowest possible heat (see pictures). The heat must be added very slowly and the butter should never boil or be browned. If the butter is burnt, it will not get the health effects and you should not use it. Let it stand on the lowest heat for 1-2 hours. It is done, when the color turns golden, and when there is no more foam or bubbles on the surface. There will be a white precipitate, and the golden liquid is the “clarified butter”/ghee. Pour it from the pot in a glass container (not plastic) and avoid pouring any of the precipitate with it . Store the ghee in the refrigerator where it is stable for several months.
